As American As Apple Pie

My passion is healthy eating and my mission is helping people get healthy from the inside out.  Statistics show that our country leads the world in both adult and childhood obesity.  Nearly two thirds of adults and one third of children are overweight or obese.  The CDC projects that one in three adults could have diabetes by 2050.  In my opinion, this is due to the way our society lives and what we are willing to put up with in the marketplace that passes for food.  


Everyone is so busy these days, that eating take out and buying microwavable processed food products is the norm.  No one seems to have time to cook anymore.  Our kids grow up in the drive-thru lane.  Companies that make processed food products are all about making a profit.  They use cheap ingredients and put toxins in our food that make us want to eat more of it, even though it isn’t really food at all!  And we keep buying it because it tastes like food (sort of) and is quick and easy.  But it’s making us all sick.


I have a better solution.  There are so many wonderful whole foods that we can make quickly; real food that provides nutrition for our bodies, instead of toxins for our bodies.  There are even desserts as American as Apple Pie that can provide nutrients for us and taste as great or better than the standard Crisco and bleached & Bromated white flour pie crust and white processed sugar-coated, pesticide sprayed apples we’d get when we  apple pie with these common ingredients.  My goal is to teach whoever wants to learn, how to cook quick easy, healthy meals, snacks and desserts with easy to find ingredients that will nourish our bodies and taste amazing.


As an example, here is a recipe for pie crust that will be much better for you than the standard recipe.  I have recently taught several pie making classes with 7, 8 and 9 year-olds who made amazing pies with this healthy recipe.  For the filling, I chose organic apples and sweeten with coconut sugar.  Just these few substitutions make even dessert, so much healthier and even safer for a diabetic to eat.

Best Pie Crust Ever!

2 Cups + ¼ Cup unbleached, un-bromated flour (King Arthur brand) (Sift before measuring)

1 teaspoon Pink Himalayan salt (or other healthy Sea Salt)

¾ Cup healthy fats – (I use)

¼ Cup butter (Organic is best)

½ Cup Coconut oil and/or non-hydrogenated organic vegetable shortening

5 1/2 Tablespoons Ice Cold Water


-Sift the 2 Cups of flour with the salt into a medium bowl. 

-Cut in the fats with a pastry blender until a dough is formed. 

-Mix the ¼ Cup flour with the ice water and stir with a fork until completely combined. 

-Pour water/flour mixture into dough and stir with a fork until combined. -Roll in wax paper and refrigerate while you make your pie filling.
